Digital creative can often be changed mid-flight, but it depends on three things: how far into the campaign you are, the airport authority's approval of the new content, which is required every time, and the airport's own rules, since some require all creative up front with specific instructions on which date each file swaps in. Static units can only be changed by reprinting and reinstalling, a second production charge.

Plan them before the flight: submit every file with the airport's approval lead, give the media owner the swap dates in writing, and treat static units as one durable image for the whole flight.
